Ingredients
  

For the Patties
  • 2 cans black beans 15 oz each, drained and rinsed
  • 1 medium sweet potato 350g, cut into ½-inch cubes
  • ¾ cup old-fashioned rolled oats helps bind the mixture together
  • ½ medium yellow onion diced
  • ½ medium red bell pepper diced
  • 4 cloves garlic minced
  • 2 teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon fennel seeds
  • ¼ teaspoon ground cumin
  • ½ cube bouillon cube vegan 'beef' type or ½ teaspoon vegetable bouillon paste
  • 1 tablespoon tamari gluten-free
  • kosher salt as needed
For Cooking

  • 1 to 2 tablespoons agave syrup adds sweetness

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line two baking trays with parchment paper.
  2. Spread black beans evenly on one tray and bake for 15 minutes.
  3. On the second tray, arrange sweet potato on one side and the diced onion, red bell pepper, and minced garlic on the other. Drizzle with oil and sprinkle with kosher salt before baking.
  4. Bake the sweet potatoes and vegetables for 15 to 20 minutes, checking for doneness.
Combining and Shaping
  1. Let the baked ingredients cool for about 10 minutes, then transfer to a food processor.
  2. Add rolled oats, spices, crumbled bouillon, and tamari; pulse until it holds together but still has texture.
  3. Shape the mixture into patties about ½ inch thick and place them on a lined baking tray.
Baking
  1. Bake patties for 15 minutes, then prepare the lime drench by whisking together avocado oil, lime juice, agave syrup, and a pinch of salt.
  2. Brush tops of the patties with the lime mixture, flip and repeat.
  3. Return patties to the oven for 5 to 10 minutes until golden brown.
  4. Cool patties for 10 minutes before serving.
