Cooking Steps
- Heat the large skillet over medium heat and add the extra-lean ground turkey or chicken. Cook for about 5–7 minutes, breaking the meat apart until browned.
- Add the finely diced onion, green bell pepper, celery, and minced garlic. Sauté for 3–4 minutes until the vegetables soften and the onions become translucent.
- Stir in the Cajun seasoning, smoked paprika, dried thyme, black pepper, and optional cayenne pepper. Add the uncooked long-grain white rice and toast it for 1–2 minutes.
- Pour in the low-sodium chicken broth, stirring well to combine. Bring to a boil over medium-high heat, then reduce heat to low. Cover and simmer for 18–20 minutes until the rice is tender.
- Remove from heat and let it sit for a couple of minutes. Fluff the Cajun Dirty Rice gently with a fork, and garnish with sliced green onions before serving hot.
