Cooking Steps
  1. Heat the large skillet over medium heat and add the extra-lean ground turkey or chicken. Cook for about 5–7 minutes, breaking the meat apart until browned.
  2. Add the finely diced onion, green bell pepper, celery, and minced garlic. Sauté for 3–4 minutes until the vegetables soften and the onions become translucent.
  3. Stir in the Cajun seasoning, smoked paprika, dried thyme, black pepper, and optional cayenne pepper. Add the uncooked long-grain white rice and toast it for 1–2 minutes.
  4. Pour in the low-sodium chicken broth, stirring well to combine. Bring to a boil over medium-high heat, then reduce heat to low. Cover and simmer for 18–20 minutes until the rice is tender.
  5. Remove from heat and let it sit for a couple of minutes. Fluff the Cajun Dirty Rice gently with a fork, and garnish with sliced green onions before serving hot.
