- Preheat your oven to 450°F (232°C) and prepare an 8×8-inch baking dish by lightly greasing it or spraying it with cooking spray.
- In a large bowl, whisk together 2 cups of self-rising flour and, if desired, ½ teaspoon of baking powder.
- Incorporate 1 ½ cups of low-fat buttermilk and ¼ cup of melted light butter into the dry mixture. Stir gently.
- Pour the sticky dough into the prepared baking dish, using a spatula to gently spread it out evenly.
- Using a knife, lightly score the dough into 9 squares.
- Place the baking dish in the preheated oven and bake for 25-28 minutes.
- Once baked, remove the dish from the oven and immediately brush the tops of the biscuits with ¼ cup of melted butter.
- Slice and serve your Butter Swim Biscuits while they are warm and fragrant.
