  • 0.5 teaspoon baking powder (optional)

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and prepare an 8×8-inch baking dish by lightly greasing it or spraying it with cooking spray.
  2. In a large bowl, whisk together 2 cups of self-rising flour and, if desired, ½ teaspoon of baking powder.
  3. Incorporate 1 ½ cups of low-fat buttermilk and ¼ cup of melted light butter into the dry mixture. Stir gently.
  4. Pour the sticky dough into the prepared baking dish, using a spatula to gently spread it out evenly.
  5. Using a knife, lightly score the dough into 9 squares.
  6. Place the baking dish in the preheated oven and bake for 25-28 minutes.
  7. Once baked, remove the dish from the oven and immediately brush the tops of the biscuits with ¼ cup of melted butter.
