Step‑by‑Step Instructions for Beef Enchiladas
  1. Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the lean ground beef and chopped onion for about 6-8 minutes until browned; then season and stir in ¼ cup of the enchilada sauce.
  3. Warm corn tortillas in the microwave for 20-30 seconds, fill with beef mixture, and roll tightly placing seam-side down in the prepared dish.
  4. Pour remaining enchilada sauce over the tortillas and sprinkle shredded cheese on top.
  5. Cover with foil and bake for 15 minutes; remove foil and bake for an additional 10 minutes until cheese is melted.
