Cooking Instructions
  1. Preheat your oven to 300°F (150°C).
  2. Pat the beef short ribs dry using paper towels. Season all sides with salt and black pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the seasoned ribs until browned, about 3-4 minutes per side.
  4. Add the chopped onion to the pot and sauté until softened, about 5 minutes. Then stir in minced garlic and cook for an additional minute.
  5. In a bowl, combine balsamic vinegar, bourbon, brown sugar, and soy sauce. Stir until the sugar dissolves to create a sauce.
  6. Return the seared ribs to the pot and pour the sauce over them, ensuring they are thoroughly coated.
  7. Cover the pot and transfer it to the oven. Cook for 2 to 3 hours, or until the meat is tender.
  8. Optionally, for a thicker sauce, remove ribs and simmer sauce on the stovetop for 10-15 minutes.
  9. Return the ribs to the pot and coat them in the thickened sauce. Garnish with fresh parsley before serving.
