Cooking Instructions
- Preheat your oven to 300°F (150°C).
- Pat the beef short ribs dry using paper towels. Season all sides with salt and black pepper.
- In a large oven-safe pot, heat olive oil over medium-high heat. Sear the seasoned ribs until browned, about 3-4 minutes per side.
- Add the chopped onion to the pot and sauté until softened, about 5 minutes. Then stir in minced garlic and cook for an additional minute.
- In a bowl, combine balsamic vinegar, bourbon, brown sugar, and soy sauce. Stir until the sugar dissolves to create a sauce.
- Return the seared ribs to the pot and pour the sauce over them, ensuring they are thoroughly coated.
- Cover the pot and transfer it to the oven. Cook for 2 to 3 hours, or until the meat is tender.
- Optionally, for a thicker sauce, remove ribs and simmer sauce on the stovetop for 10-15 minutes.
- Return the ribs to the pot and coat them in the thickened sauce. Garnish with fresh parsley before serving.

Notes
For optimal results, ensure ribs are dry before seasoning and check for tenderness around the 2-hour mark. Adjust sauce sweetness if needed.
