Baking Instructions
  1. Gather all your ingredients on a clean, flat surface.
  2. Grate the zucchini and place it in a fine mesh strainer or clean kitchen towels to drain for about 10 minutes.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  4. In another bowl, whisk together the eggs, vegetable oil, and buttermilk until smooth.
  5. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  6. Fold in the grated cheese and chopped green onions.
  7. Grease a loaf pan and pour the batter in, smoothing the top.
  8. Bake in a preheated oven at 350°F for 50-60 minutes until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once cooled, slice and serve warm with cream cheese or herb-infused butter.
