Ingredients
  

For the Marinade
  • 4 pieces Dried guajillo chilies Remove stems and seeds
  • 4 pieces Dried ancho chilies Remove stems and seeds
  • 2 tablespoons Hot water For soaking the chilies
  • 2 pieces Tomatoes Ripe, chopped
  • 4 cloves Garlic Minced
  • 1 piece Onion Roughly chopped
  • 2 tablespoons Vinegar or lime juice For marinade
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 pinch Cloves
  • 1 teaspoon Black pepper
For the Meat
  • 3-4 pounds Beef chuck roast Braised until tender
  • 2 pieces Bay leaves
  • 4 cups Water or beef broth To cover the meat
For Serving
  • 12 pieces Corn tortillas For tacos
  • Optional toppings
  • Cheese Melty goodness
  • Chopped white onion For garnish
  • Fresh cilantro For garnish
  • Lime For squeezing
  • Salsa For extra flavor
  • Pickled jalapeños For a spicy kick

Method
 

Step-by-Step Instructions
  1. Soak dried chilies in hot water for 20 minutes until softened.
  2. Blend softened chilies with tomatoes, garlic, onion, vinegar or lime juice, cumin, oregano, cloves, and black pepper until smooth.
  3. Marinate beef in the blended marinade, refrigerate for at least 4 hours or overnight.
  4. Cook marinated beef with bay leaves and water or broth on low heat for 3-4 hours.
  5. Shred the cooked beef and keep broth warm.
  6. Heat corn tortillas on a griddle, optionally dipping in warm broth.
  7. Assemble tacos with shredded beef and optional toppings, cooking on a skillet until crispy.
  8. Garnish with onion, cilantro, and lime juice before serving.
