Step-by-Step Instructions for Overnight Breakfast Casserole
- In a large skillet over medium heat, brown the breakfast sausage for about 5–7 minutes until fully cooked and no longer pink. Stir occasionally to break up the sausage.
- In a large mixing bowl, whisk together the eggs, sour cream, salt, black pepper, and milk until well combined and smooth.
- Grease a 9x13 inch baking dish with non-stick spray. Layer the cooked sausage, followed by the hash browns and then the shredded cheddar cheese.
- Pour the egg mixture evenly over the layered ingredients in the baking dish, allowing it to seep through.
- Cover the baking dish with plastic wrap and refrigerate overnight, allowing the flavors to meld.
- Preheat your oven to 350°F (175°C) about 10 minutes before baking.
- Remove the plastic wrap and bake for 1 hour and 10 minutes or until set in the center and golden brown.
- Let the casserole cool for about 10 minutes before serving. Optionally sprinkle with chopped green onions.

Notes
For best results, layer ingredients evenly and avoid overbaking to keep the casserole moist.
