  1. Cut 1 pound of chicken breast into uniform, bite-sized pieces. Season with salt and pepper.
  2. Set up a dredging station with one bowl for beaten eggs and another with cornstarch.
  3. Coat each chicken piece in egg and then in cornstarch, ensuring an even layer.
  4. Heat oil in a large skillet over medium-high heat for about 3-4 minutes.
