Preparation
- Preheat your oven to 350°F (175°C). Gather ingredients and equipment.
- In a large mixing bowl, combine rolled oats, almond milk, diced apples, maple syrup or honey, cinnamon, vanilla extract, baking powder, and salt. Stir for 2-3 minutes until mixed.
- Pour the mixture into a greased muffin tin, filling each cup about ¾ full.
- Bake for 25 minutes, until tops are golden and set.
- Cool for 5-10 minutes, then remove from muffin tin.
