- In a large mixing bowl, add 1 cup of peanut butter and ½ cup of either honey or maple syrup. Stir vigorously for about 2–3 minutes until smooth.
- Pour in ½ teaspoon of vanilla extract and a pinch of salt if using it. Mix well for another minute.
- If adding rolled oats, sprinkle in 1 cup of oats, then gently fold in 2 cups of broken mini pretzels.
- Scoop out the mixture and shape into rounds, placing them on a lined baking sheet with space between cookies.
- Transfer the cookies to the refrigerator and let them chill for at least 1 hour.
