  • 1 kg Boneless, skinless chicken thigh fillets
  • 2 cloves Garlic, minced
  • 1 tablespoon Ground coriander
  • 1 tablespoon Ground cumin
  • 1 teaspoon Ground cardamom
  • 1 teaspoon Ground cayenne pepper Adjust based on spice preference
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Fresh lemon juice
  • 3 tablespoon Olive oil
For the Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 clove Garlic, crushed
  • 1 teaspoon Cumin
  • 1 tablespoon Lemon juice
  • Salt and pepper to taste
For Serving
  • 4 pieces Lebanese or pita breads
  • 2 cups Sliced lettuce (cos or iceberg)
  • 1 cup Tomato slices
  • 1 cup Finely sliced red onion
  • Shredded cheese (optional) for a creamy touch
  • Hot sauce of choice (optional) for extra kick

Method
 

Step-by-Step Instructions
  1. Prepare the Chicken: Trim excess fat from chicken and cut into thin strips if desired.
  2. Make the Marinade: Combine ingredients in a ziplock bag, coat chicken, and refrigerate for 3 to 24 hours.
  3. Prepare the Yogurt Sauce: Mix yogurt, crushed garlic, cumin, lemon juice, and season to taste.
  4. Heat the Cooking Surface: Preheat skillet or grill to medium-high heat, brush with oil if using a skillet.
  5. Cook the Chicken: Add chicken to skillet/grill and cook for 4-5 minutes each side until charred and cooked through.
  6. Rest the Chicken: Remove from heat and let rest under foil for 5 minutes before slicing if desired.
  7. Serve and Assemble: Prepare platters with bread, salad fixings, and serve Chicken Shawarma.
