- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8–10 minutes. Reserve ½ cup pasta water, drain and set aside.
- In a large skillet, heat to medium and add Italian sausage, breaking it into crumbles. Sauté for 6–8 minutes until browned.
- Push sausage to side of skillet. Add butter and let it melt. Stir in minced garlic and crushed red pepper flakes; cook until fragrant.
- Combine sausage with garlic butter. Add spinach and cook 2–3 minutes until wilted. Season with Italian seasoning, salt, and pepper.
- Add cooked spaghetti and marinara sauce to skillet; toss for 2–3 minutes until well coated.
- Sprinkle mozzarella cheese over pasta; cover and melt on low heat for 3–5 minutes, or broil for a bubbly finish.
- Garnish with chopped parsley and grated Parmesan. Serve warm.
