Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. In a bowl, combine 95 g of plain flour, 2 tablespoons of cocoa powder, 1 teaspoon of baking powder, and ¼ teaspoon of salt. Stir to mix.
  3. Melt 225 g of chopped dark chocolate and 56 g of butter together until smooth.
  4. Beat together 2 room-temperature eggs, 100 g of caster sugar, 90 g of Demerara sugar, and 1 teaspoon of vanilla until light and fluffy.
  5. Fold the melted chocolate mixture into the beaten eggs and sugar mixture. Then add the dry ingredients and mix until just blended.
  6. Fold in 85 g of chocolate chips to ensure even distribution.
  7. Spoon the batter onto the prepared baking tray and spread it evenly. Bake for 15-20 minutes.
  8. Allow the brookies to cool completely on a wire rack before cutting them into squares.
