For the Cheesecake Filling
  • 8 oz Cream cheese softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
For the Fruity Layer
  • 2 cups Fresh strawberries sliced
  • ½ cup Strawberry jam or compote
For the Crust
  • 1 cup Graham cracker crumbs
  • ½ cup Butter melted

Method
 

Preparation
  1. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy, about 3–5 minutes. Cover and chill for 15–20 minutes.
  2. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs with melted butter, press into 8x8-inch baking dish, and bake for 10–12 minutes until golden brown. Cool completely.
  3. Cut the cooled graham cracker crust into squares, spread cream cheese filling on one square.
  4. Dollop strawberry jam on top, layer sliced strawberries, then top with another graham cracker square to form a sandwich.
  5. Repeat with remaining squares. Chill assembled sandwiches for at least 30 minutes before serving.
