- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy, about 3–5 minutes. Cover and chill for 15–20 minutes.
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs with melted butter, press into 8x8-inch baking dish, and bake for 10–12 minutes until golden brown. Cool completely.
- Cut the cooled graham cracker crust into squares, spread cream cheese filling on one square.
- Dollop strawberry jam on top, layer sliced strawberries, then top with another graham cracker square to form a sandwich.
- Repeat with remaining squares. Chill assembled sandwiches for at least 30 minutes before serving.
