  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cups Unsalted butter softened
  • 4 ounces Cream cheese softened
  • 1 cups Granulated sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
For the Cranberries
  • 1.25 cups Fresh or frozen cranberries toss in flour to prevent sinking
Optional for Dusting
  • 2 tablespoons Powdered sugar

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, beat together softened butter and cream cheese until smooth and fluffy.
  3. Gradually add granulated sugar, beating until fully incorporated and mixture turns light and pale.
  4. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  5. Whisk together flour, baking powder, and salt in a separate bowl.
  6. Gradually combine dry ingredients with wet ingredients, mixing on low until just combined.
  7. Toss cranberries in flour and gently fold into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake in the preheated oven for 55 to 65 minutes or until a toothpick comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. If desired, dust with powdered sugar before serving.
