For the Chicken Mixture
  • 2 cups shredded cooked chicken Leftover chicken works well.
  • ½ cup BBQ sauce Choose your favorite brand or homemade.
For the Sandwich
  • 4 slices bread Thick, crusty varieties hold up best.
  • 2 cups shredded cheese A blend of cheddar and mozzarella is ideal.
  • 2 tablespoons butter For grilling the bread.

Method
 

Steps
  1. In a mixing bowl, combine chicken and BBQ sauce. Stir until fully coated.
  2. Spread butter on one side of each bread slice.
  3. Heat skillet over medium heat for 2-3 minutes.
  4. Place two slices of bread in the skillet, buttered-side down. Add half of the cheese.
  5. Spread BBQ chicken mixture on top of the melted cheese.
  6. Sprinkle remaining cheese over chicken mixture and top with other two bread slices, buttered-side up.
  7. Cook for 3-4 minutes until bottom is golden brown, then flip and cook until the other side is golden.
  8. Remove from skillet, let cool slightly, and cut in half before serving.
