  • 4 pieces Ripe Pears Bosc or Anjou are recommended for their sweetness
For the Filling
  • 4 ounces Goat Cheese can substitute with cream cheese or ricotta
  • ½ cup Fresh or Dried Cranberries dried cranberries work perfectly if fresh are unavailable
  • ¼ cup Honey agave syrup can be used for a lower sugar option
  • 1 tablespoon Fresh Lemon Juice juice of about half a lemon brightens the flavor
  • 1 teaspoon Ground Cinnamon optional nutmeg can also be added for extra warmth
For the Topping
  • ¼ cup Chopped Walnuts or Pecans omit for nut-free, or substitute with sunflower seeds
  • Fresh Mint Leaves as an optional garnish for a pop of freshness

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a baking dish using cooking spray or olive oil.
  3. In a mixing bowl, combine goat cheese, honey, lemon juice, and cinnamon. Mix until smooth.
  4. Slice the pears in half lengthwise and remove the core.
  5. Spoon the goat cheese mixture into each pear half.
  6. Sprinkle cranberries over the filled pear halves.
  7. Optional: Sprinkle chopped nuts over the filled pears.
  8. Drizzle extra honey over the tops of the pears.
  9. Cover with aluminum foil and bake for 25-30 minutes.
  10. Remove the foil in the last 5-10 minutes to brown the tops.
  11. Let cool for a few minutes before serving.
  12. Garnish with fresh mint leaves before serving.
