- Preheat your oven to 400°F (200°C).
- Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes.
- Cook gnocchi in boiling salted water until they float, about 2-3 minutes, then drain.
- Squeeze roasted garlic out of skins and mash into a paste.
- In a skillet, combine gnocchi, garlic paste, salt, pepper, and Parmesan cheese over medium heat for 5 minutes.
- Serve, garnished with chopped parsley if desired.
