Step-by-Step Instructions
  1. Start by bringing a large pot of water to a rolling boil over high heat.
  2. While waiting for the water, scrub and chop 2 pounds of carrots into even 1-inch pieces.
  3. Once the water is boiling, carefully add the chopped carrots and cook gently for 15-20 minutes until fork-tender.
  4. Drain the tender carrots and return them to the pot.
  5. Add 4 tablespoons of butter and ½ cup of chicken (or vegetable) stock, seasoning with salt and pepper to taste.
  6. Mash the carrots using a hand masher or an immersion blender until you reach the desired consistency.
