Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs with melted butter in a bowl and press into the bottom of the springform pan.
  3. Bake the crust for 8–10 minutes until lightly golden and allow to cool.
Making the Filling
  1. Beat softened cream cheese until smooth, gradually adding brown sugar.
  2. Mix in mashed ripe bananas and add eggs one at a time.
  3. Stir in heavy cream and vanilla extract until smooth.
Baking
  1. Pour cheesecake filling over the crust in the springform pan and place the pan in a larger baking dish filled with hot water.
  2. Bake at 325°F (160°C) for 55–65 minutes until edges are set.
  3. Turn off the oven and crack the door, cooling for about 1 hour.
  4. Refrigerate for at least 4 hours to set.
Finishing Touches
  1. Top with sliced bananas, drizzle with caramel sauce, and add chopped nuts.
