Preparation
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs with melted butter in a bowl and press into the bottom of the springform pan.
- Bake the crust for 8–10 minutes until lightly golden and allow to cool.
Making the Filling
- Beat softened cream cheese until smooth, gradually adding brown sugar.
- Mix in mashed ripe bananas and add eggs one at a time.
- Stir in heavy cream and vanilla extract until smooth.
Baking
- Pour cheesecake filling over the crust in the springform pan and place the pan in a larger baking dish filled with hot water.
- Bake at 325°F (160°C) for 55–65 minutes until edges are set.
- Turn off the oven and crack the door, cooling for about 1 hour.
- Refrigerate for at least 4 hours to set.
Finishing Touches
- Top with sliced bananas, drizzle with caramel sauce, and add chopped nuts.
