Step-by-Step Instructions
  1. In a mixing bowl, combine the chipotle adobo sauce, lime juice, minced garlic, salt, and pepper. Add the chicken breast and marinate for at least 30 minutes.
  2. Rinse the rice under cold water until the water runs clear. Combine with chicken broth in a saucepan, bring to a boil, then reduce heat and simmer for 18-20 minutes until cooked.
  3. Preheat grill or skillet over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
  4. Let the grilled chicken rest for a few minutes, then slice into bite-sized pieces.
  5. Assemble the bowls starting with the rice, layered with chicken, corn, black beans, and pico de gallo.
  6. Top each bowl with avocado slices and a dollop of yogurt.
