Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Peel and dice sweet potatoes into bite-sized cubes.
  2. Toss diced sweet potatoes with olive oil, smoked paprika, cumin, and salt. Spread on a baking sheet and roast for 25–30 minutes.
  3. In a skillet, cook ground beef until browned. Add chili powder, garlic powder, cumin, black pepper, and salt.
  4. Sauté diced green bell pepper in olive oil until tender-crisp, about 4-5 minutes.
  5. Assemble the bowl starting with roasted sweet potatoes, followed by ground beef, then sautéed bell pepper.
  6. Top with Greek yogurt and chopped cilantro. Serve immediately or store for meal prep.
