- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a large mixing bowl, combine 1 cup of cottage cheese and 6 large eggs until well blended.
- Stir in 1 cup of shredded cheese, 1 cup of diced vegetables, 1 teaspoon of salt, and ½ teaspoon of black pepper.
- Fill each muffin cup three-quarters full with the batter.
