- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- Combine chopped rhubarb, sugar, and cornstarch in a bowl and let sit for 10 minutes.
- Mix flour, oats, brown sugar, baking powder, and salt in another bowl.
- Add melted butter and vanilla to the dry mixture and stir until combined.
- Press half of the mixture into the bottom of the greased baking dish.
- Spread the marinated rhubarb mixture evenly over the crust layer.
- Sprinkle the remaining crumb mixture evenly over the rhubarb.
- Bake for about 30-35 minutes until golden brown and bubbling.
- Allow to cool in the dish for at least 10 minutes before slicing.
