- Preheat your oven to 350°F (175°C) and gather mixing bowls, measuring cups, and an electric mixer.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3-5 minutes.
- Add the egg, vanilla extract, and almond extract to the butter-sugar mixture; beat until combined.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- After chilling, roll the dough out on a lightly floured surface to about ¼ inch thickness.
- Use cookie cutters to cut out desired shapes and place on prepared baking sheets.
- Sprinkle colored sugar or add sprinkles on top of each cookie before baking.
- Bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them!
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to wire racks.
