- In a large mixing bowl, combine the ground chicken, minced green onions, egg, lime zest, panko breadcrumbs, cilantro, grated lemongrass, ginger, garlic, and kosher salt.
- Take about 2 tablespoons of the mixture and roll it into a meatball, placing it into the baking dish.
- Bake the meatballs in the oven for 10 minutes.
- After 10 minutes, brush the meatballs with sweet chili sauce.
- Return to the oven and bake for an additional 5 to 10 minutes until cooked through.
- Remove from oven, let rest, and serve with extra sweet chili sauce.
