For the Quesadilla
  • 1 bunch fresh spinach washed and chopped
  • 1 cup feta cheese, crumbled for flavor
  • 4 large flour or corn tortillas based on preference
  • 1 tablespoon olive oil for sautéing

  • optional chopped onions for additional flavor
  • optional chopped tomatoes for additional flavor

Cooking Instructions
  1. Wash the fresh spinach thoroughly, chop leaves, and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped spinach for 2-3 minutes.
  3. Lay out tortillas, scoop sautéed spinach mixture onto one half, sprinkle feta, and fold over.
  4. Cook the assembled quesadilla in the skillet for 3-4 minutes on each side until golden brown and crispy.
  5. Remove from skillet, let rest for 1 minute, slice into wedges, and serve warm.
