  • 4 pieces Corn tortillas
  • 2 cups Shredded cooked chicken breast Use rotisserie chicken for convenience.
  • 1 cup Mozzarella cheese Shredded.
For the Pineapple Salsa
  • 1 can Canned pineapple chunks Drained.
  • 1 piece Lime Juiced.
For the Seasoning
  • 1 tablespoon Chili lime seasoning
  • ½ cup BBQ sauce Choose your favorite.
For Garnish
  • ¼ cup Fresh cilantro Optional.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C).
  2. Place corn tortillas on a baking sheet in a single layer and bake for 10-12 minutes until golden brown and crispy.
  3. In a bowl, mix shredded chicken with BBQ sauce and chili lime seasoning until evenly coated.
  4. In another bowl, combine drained pineapple chunks with lime juice.
  5. Once tortillas are baked, top each with BBQ chicken mixture and sprinkle with mozzarella cheese.
  6. Return assembled tostadas to oven for 2-3 minutes until cheese melts.
  7. Garnish with fresh cilantro before serving.
