Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of long grain white rice under cold water until the water runs clear. Allow to drain.
  2. In a medium saucepan, heat 2 teaspoon of olive oil over medium heat. Add chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and sauté for 30 seconds.
  3. Stir in the rinsed rice and cook for 4-5 minutes until lightly golden.
  4. Add 1 cup of tomato sauce, 1.75 cups of broth, 0.5 teaspoon of ground cumin, and optionally, 0.25 teaspoon of chili powder. Season with salt and pepper. Bring to a boil.
  5. Reduce heat, cover, and let simmer for 18-20 minutes. Do not lift the lid during this time.
  6. After cooking, turn off the heat and let it rest covered for 5 minutes. Fluff the rice with a fork and garnish as desired.
