Waffle Batter
  • 1 can chickpeas rinsed and drained
  • 1 small yellow or green onion
  • 2 cloves garlic minced
  • ¼ cup cilantro chopped
  • ¼ cup parsley chopped
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon cardamom a pinch
  • ½ teaspoon black pepper
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil plus more if needed
  • 2 tablespoons lemon juice freshly squeezed
  • 1 large egg beaten
  • 2 tablespoons sesame seeds

Method
 

Waffle Preparation
  1. In a food processor, combine the rinsed chickpeas, yellow or green onion, garlic, cilantro, parsley, cumin, salt, cardamom, and black pepper. Pulse until thickly pureed, resembling a chunky paste. This should take about 1-2 minutes.
  2. Add all-purpose flour, cornstarch, and baking powder to the chickpea mixture. Pulse a few times to integrate without over-processing, maintaining a chunky texture.
  3. Stir in olive oil and lemon juice. Process for about one minute, adding more olive oil if needed. The mixture should be slightly sticky.
  4. Using a spatula, mix in the beaten egg and sesame seeds by hand until fully blended.
  5. Preheat waffle iron to medium-high heat, around 375°F (190°C). Lightly grease with olive oil or non-stick spray.
  6. Scoop about half a cup of falafel mixture into the preheated waffle iron. Cook for 5-7 minutes, until golden brown and crispy.
  7. Carefully remove the waffles from the iron and serve immediately with your favorite dipping sauce.
