Preparation Steps

  4. Spread seasoned cauliflower in a single layer on the baking sheet, ensuring not to overcrowd.
  5. Roast cauliflower bites for 25-30 minutes, flipping halfway for even browning.
  6. While roasting, whisk together Greek yogurt or mayonnaise, minced garlic, and lemon juice for the garlic sauce.
  7. If desired, slowly add water to achieve a thinner sauce consistency.
  8. Cover and chill the sauce in the refrigerator until the cauliflower is done.
  9. Once roasted, let cauliflower cool slightly before serving with garlic sauce and garnish with parsley if desired.
